While trying to balance it all, moms tend to put themselves on the back burner.
But in reality, a happy and healthy mom, is a better mom. The first major step you can take for yourself is to choose foods that are good for your body. This “Everything but the Kitchen Sink” Breakfast Scramble is a great start.
This scramble can be modified to suit your dietary needs. For example, instead of eggs and bacon, use tofu and beans for a vegan option. The cheese can also be omitted for nutritional yeast for a dairy-free, cheesy flavor. The recipe is meant to be a starting point. As the name suggests, there are no rules, so use whatever ingredients you have on hand.
Although eggs are typically considered a “breakfast“ food, I prefer to have this scramble for lunch. It is also great as a post-workout meal.
To round out the scramble, I like to include some sort of protein, veggies, greens, cheese and of course eggs. For this scramble, I used some onions, red pepper, zucchini, mushrooms, spinach, bacon and Parmesan cheese.
Note: At the beginning of the week, I like to chop up whatever vegetables and fruits I purchase. I store them in reusable containers to use throughout the week. This keeps healthy fruit on hand for snacking, and I can grab veggies quickly when needed.
Fry up the bacon or any other protein you choose (tofu is also great for a vegetarian option). Next, add the veggies, sautéing until everything is nice and soft. Finally, add your whisked eggs, salt, pepper and cheese, continuing to gently mix until everything is cooked through.
