PASTA WITH CREAMY AVOCADO SAUCE

I am always looking for quick and easy lunch ideas that both my kids and I will enjoy.

Now let me tell you, I have picky eatersbut they loved this Pasta with Creamy Avocado Sauce.

Most kids (and their moms!) love pasta.  We are no different.  When I first made this dish for my son, he looked at the sauce a little bit funny.   He asked why it was green, but was still willing to try a tiny bite.  After that, he was sold.  Yay, for a mom win!

This Pasta with Creamy Avocado Sauce is a fun way to get all the healthy fat benefits of avocado.  Also, if you are looking for a lower carbohydrate version, swap the pasta for zucchini noodles.  It is still equally as delicious!

For this dish, start by boiling the pasta of your choice (we like spaghetti).  In the meantime, mash half of an avocado with a fork, add half a lemon, a tablespoon of creamy ricotta (I prefer full fat).  Add in a 1/4 teaspoon of garlic powder and salt and pepper to taste.  

When its just for me, I mix in a bit of crushed red pepper or Sriracha for spice.  Also, for a vegan version, swap the ricotta for some nutritional yeast, for a yummy, cheesy flavor.

When the pasta is finished, strain and add directly to the bowl with the avocado sauce.  Stir and enjoy immediately.  Done in less than 15 minutes, lunch could not get to the table any quicker!

  • 1/4 cup Pasta of choice (we used spaghetti)
  • 1/2 Avocado
  • 1 tbsp. Ricotta (full-fat)
  • 1/4 tsp Garlic Powder
  • Salt & Pepper to taste

Instructions
  1. Prepare paste per box instructions.
  2. While pasta is cooking, add 1/2 avocado to a small bowl.
  3. Mash avocado until smooth.
  4. Add remaining ingredients and mix until well-combined.
  5. Once cooked, directly add hot pasta to avocado sauce.
  6. Stir and enjoy immediately. Top with Sriracha or crushed red pepper for additional flavor.
