"Everything but the Kitchen Sink" Breakfast Scramble
A fun and healthy breakfast option to start your day off on the right foot.

Ingredients
  • 2 - 3 Eggs
  • 1 - 2 handfuls Greens of Choice (ex. Spinach, Kale, Mixed Greens)
  • 1 - 2 Strips of Bacon or Protein of Choice
  • 1 cup Mixed Veggies (ex. Zucchini, Bell Pepper, Onion, Mushrooms, etc.)
  • 1 tsp Extra Virgin Olive Oil
  • 1 oz Cheese (Optional)

  • 2 - 3 Eggs
  • 1 - 2 handfuls Greens of Choice (ex. Spinach, Kale, Mixed Greens)
  • 1 - 2 Strips of Bacon or Protein of Choice
  • 1 cup Mixed Veggies (ex. Zucchini, Bell Pepper, Onion, Mushrooms, etc.)

Instructions
  1. Cut bacon into small pieces and fry over medium heat until crisp.
  2. Remove bacon from pan and place on paper towel to drain excess oil.
  3. Add mixed veggies to pan, as well as any additional olive oil if needed. Cook over medium heat until veggies are soft.
  4. Add in greens and cook until wilted.
  5. Fold in bacon, whisked eggs and cheese.
  6. Gently mix and cook until eggs are firm and cheese is melted.
  7. Enjoy!
