Ingredients
- 2 - 3 Eggs
- 1 - 2 handfuls Greens of Choice (ex. Spinach, Kale, Mixed Greens)
- 1 - 2 Strips of Bacon or Protein of Choice
- 1 cup Mixed Veggies (ex. Zucchini, Bell Pepper, Onion, Mushrooms, etc.)
- 1 tsp Extra Virgin Olive Oil
- 1 oz Cheese (Optional)

Instructions
- Cut bacon into small pieces and fry over medium heat until crisp.
- Remove bacon from pan and place on paper towel to drain excess oil.
- Add mixed veggies to pan, as well as any additional olive oil if needed. Cook over medium heat until veggies are soft.
- Add in greens and cook until wilted.
- Fold in bacon, whisked eggs and cheese.
- Gently mix and cook until eggs are firm and cheese is melted.
