Turkey Stuffed Peppers in Tomato Sauce
Peppers stuffed with turkey and rice for a simple and delicious , gluten-free dinner option.

For the Rice:
  • 1/2cup Rice
  • 1cup Water
For Meat Mixture
  • 4 – 6 Bell peppers (any variety)
  • 1pound Ground turkey
  • 1tsp Salt
  • 1/4tsp Pepper
  • 1 tsp Garlic Powder
  • 1tsp Onion powder
  • 1tsp Paprika
  • 1/4cup Tomato Juice (not from concentrate)
For Tomato Sauce
  • 2large cans Tomato Juice (including the 1/4 cup used in meat mixture)
  • 1tsp Salt (to taste)
  • 1/2tsp Pepper to taste
  • 1 tbsp Sugar
  • 1 Bay leaf
  1. Prepare rice by adding 1/2 cup rice to a sauce pan with 1 cup of water. Bring up to a boil and cook covered on low for approximately 20 minutes. Fluff with fork and allow to cool.
  2. While rice is cooking, prepare peppers by washing and removing tops and seeds.
  3. Prepare meat mixture in a large bowl by adding cooled rice, 1/4 cup of tomato sauce and spices.
  4. Stir meat mixture gently until everything is well-combined.
  5. Stuff each pepper generously with meat mixture and arrange in a large pot. If you have remaining meat mixture, form good size meatballs and place among stuffed peppers.
  6. Cover with remaining tomato sauce.
  7. Add salt, pepper, sugar and bay leaf.
  8. Bring up to a boil, reduce heat and let simmer for approximately 40 – 45 minutes.
  9. Serve with crusty bread and enjoy!
