TURKEY STUFFED PEPPERS IN TOMATO SAUCE

These Turkey Stuffed Peppers in Tomato Sauce are a homage to my Romanian heritage.  

Peppers are stuffed with turkey and rice for a simple, gluten-free dinner option.

The first step to making these Turkey Stuffed Peppers in Tomato Sauce is to cook up some rice.  Usually, my mother added the rice raw to the meat mixture, but I prefer to add the rice in already cooked.   This helps reduce the cooking time significantly. 

To begin, cook the rice by adding 1/2 cup of rice to a saucepan with 1 cup of water.  Once the water comes up to a boil, stir and cook covered on low for approximately 20 minutes.  In the meantime, prep the peppers by removing the tops and seeds.

Next, prepare the meat mixture.  Add one pound of ground turkey to a bowl, along with the cooled rice, 1/4 cup of tomato sauce and spices.  Stir gently until everything is well-combined.

Then, stuff each pepper generously with the meat mixture and place into a large pot.  You may have some meat mixture left over, but that’s OK.  Because not everyone in my family likes peppers, I usually form the remaining meat mixture into good-sized “meatballs”.

Finally, cover with the remaining tomato sauce, salt, pepper, sugar and bay leaf.  Bring the sauce up to a boil, reduce the heat and let simmer for approximately 40 – 45 minutes, or until the meat is cooked through.

  • 1 tsp Onion powder
  • 1 tsp Paprika
  • 1/4 cup Tomato Juice (not from concentrate)
For Tomato Sauce
  • 2 large cans Tomato Juice (including the 1/4 cup used in meat mixture)
  • 1 tsp Salt (to taste)
  • 1/2 tsp Pepper to taste
  • 1 tbsp Sugar
  • 1 Bay leaf

  1. Prepare rice by adding 1/2 cup rice to a sauce pan with 1 cup of water. Bring up to a boil and cook covered on low for approximately 20 minutes. Fluff with fork and allow to cool.
  2. While rice is cooking, prepare peppers by washing and removing tops and seeds.
  3. Prepare meat mixture in a large bowl by adding cooled rice, 1/4 cup of tomato sauce and spices.
  4. Stir meat mixture gently until everything is well-combined.
  5. Stuff each pepper generously with meat mixture and arrange in a large pot. If you have remaining meat mixture, form good size meatballs and place among stuffed peppers.
  6. Cover with remaining tomato sauce.
  7. Add salt, pepper, sugar and bay leaf.
  8. Bring up to a boil, reduce heat and let simmer for approximately 40 - 45 minutes.
  9. Serve with crusty bread and enjoy!
