These vegan chocolate peanut butter oatmeal bars are a healthy treat that will leave you feeling good.
When nine o’clock hits at my house, I start looking for the sugar. These help take the edge off, without ruining my health goals.
Filled with the healthy fats of coconut oil, as well as the protein of oats and peanut butter, these healthy vegan chocolate peanut butter oatmeal bars are sure to satisfy. Definitely a healthy treat that tastes great and makes you feel like you are secretly cheating on your diet.
The ingredients are simple and chances are most of them are already sitting in your pantry. Also, these bars are customizable to fit your own personal preferences. All you need are some oats, coconut oil, cocoa powder (or cacao powder), nut butter and sweetener of your choice (we used agave syrup).

First, in a saucepan, gently melt your coconut oil. Once melted, add in the nut butter of your choice, along with the cocoa powder, agave syrup and a pinch of salt.
Meanwhile, prepare two cups of rolled oats in a mixing bowl. Pour the chocolate mixture over the oats and gently mix, until well incorporated.
Finally, transfer the oat mixture to an 8 x 8 baking dish lined with parchment paper. This will help when it is time to cut the bars.
Place in the freezer for approximately one hour, until the bars are nice and firm. Once chilled, cut the bars into rectangles. This mixture should make 8 to 10 good size bars. Store in a Tupperware container in the freezer and indulge whenever the craving strikes!

- In a separate bowl, add two cups of rolled oats.
- Pour chocolate mixture over oats and mix gently until well incorporated.
- Press mixture into a lined 8 x 8 baking dish.
- Place in freezer for approximately 1 hour, until firm.
- Cut into 8 to 10 bars and enjoy when those sugar cravings hit!
- Store bars in freezer, as they will soften quickly at room temperature.
